BANANAS PANCAKES

The breakfast favourite, pure excellence. Every weekend the decision between pretzel and pancakes is hard 😉

Most of the time, however, the pancakes win. It’s best you try this recipe yourself.

Recipe – Banana Pancakes:

Ingredients:

130g buckwheat or spelt flour

30 coconut flour

2 chia eggs (2 tbsp chia seeds + 6 tbsp water)

1 ripe banana

1 teaspoon baking powdercoconut milk (until desired consistency is achieved)

0,5 tsp cinnamon

0,5 tsp vanilla powder

1 tsp coconut oil

2 tbsp coconut sugar

pinch of salt


Preparation

Peel the banana, put in a bowl and mash with a fork.

Mix flour, baking powder, coconut, sugar and salt in a bowl.

Add chia eggs, milk, coconut oil, cinnamon, vanilla powder + banana and mix.

Allow to infuse for 10 minutes.

Heat a few drops of (coconut) oil in a coated pan and gradually fry the pancakes in it.

As soon as small bubbles form, you can turn your pancakes and fry them golden brown on the other side.


Tip: Prepare banana pancakes, fry, let cool, wrap in foil, freeze and toast at the end. Normally 3-4 minutes at medium setting is sufficient.
